Summer is the best time to have family, friends, and groups at your home to gather for an easy meal outside.   Make it Summer Salad Suppers.   When each person brings a salad to share, your menu is done.  Let me share tips and recipes for a Summer Salad Supper Get Togethers and Recipes.

When?

Plan Salad suppers with a group of women or couples for an easy meal together. You can do this after church, for a fellowship, after a book club, lunch, or an evening at your house. This is a great way to have a dozen people at your house without feeling overwhelmed with a menu to plan.

Backyard suppers

Idea #1- Simple Salad Plan – protein salads and side salads  

You can simply just have each family bring a salad.   Tell them this is the main menu for the meal.  They could bring salads with protein in them.    Taco salad, Crab, or chicken pasta salad, are some examples of salads they could bring. 

They could also bring some lettuce or fruit salads too.   Variety is the key.  Something your kids or husband or the ladies would like.   Ask someone to bring dessert if you want desserts or have someone bring watermelon.  

Idea #2- Grilled Meat and Salads

Another way to have a salad supper is if you provide the grilled chicken breast and everyone else brings a salad. The second way to accomplish this is if everyone brings meat to the grill and a salad. You can supply the grill and beverage.   

Ask two other people to bring breadsticks and a dessert such as ice cream sandwiches or brownies, if you think the guys are big eaters. This is a great way to eat some nutrients and spend time outdoors together. 

Idea #3- Assemble a Salad Plate

The last idea for a Salad Supper is to assemble your salad.  For this everyone will need to sign up to bring the toppings for the salad.   You could provide the lettuce for the salad or ask a few others to bring it too.

I suggest a large bowl of lettuce is a mixture of small chopped Romain lettuce, mixed with chopped cabbage/carrot.  The lettuce is chopped in a large bowl and everyone adds it to their plates and then adds the rest of the toppings.

Salad Topping Ideas: Grilled chicken pieces, ham squares, shrimp, bacon pieces, cheese, avocado, tomatoes, onions, sunflower seeds, radishes, cucumbers, croutons, black beans, corn, peas, and dressing assortments are the choices to top your salad.

If desired others can bring drinks and desserts or watermelon.  Be creative and make it easy.

Broccoli Salad Recipe

I love this salad and when I make it I can’t get enough. I can’t wait for the leftovers and it tastes just as good the next day.  

  • 1 lb of Broccoli cut into bite-size pieces
  • 1/2 red onion diced
  • 1/3 cup raisins- golden or regular
  • 1/3 cup slivered almonds or sunflower seeds

Dressing: Mix dressing and pour over broccoli salad ingredients

  • 2/3 cup Mayonnaise
  • 1/4 cup Cider Vinegar
  • 1 cup buttermilk
  • Salt and pepper to taste

Mix and serve. Tastes better when it sets and mixes flavors for 15 minutes.

Quinoa Salad

Cilantro lime dressing with Quinoa Salad Recipe

Quinoa Salad made with Cilantro lime dressing is a salad that can be eaten as a main dish and the link for this recipe is also included in my blog on Cold meal lunches.

  • 1 ½ cups Quinoa- plain or multi-colored or quinoa brown rice lentil mix (purchased at Aldi)
  • 3 cups of water
  • 2 tsp chicken broth base
  • 1 can of black beans drained and rinsed
  • 1 can corn drained
  • ½ cup chopped cucumbers
  • ½ cup chopped grape or Roma tomatoes
  • ¼ cup chopped red/yellow or orange peppers
  • ½ cup chopped red onion or Vidalia onion
  • 1- 12 ounce can chicken breast drained (I use Kirkland Brand)
  • 1 avocado chopped- only if desired.
Cilantro Lime Dressing

  • 1 small bunch cilantro chopped
  • 2-3 tsp minced garlic
  • Dash of salt
  • 1-2 tsp honey or maple syrup
  • 1/4 cup olive oil
  • ¼ cup of rice vinegar
  • ¼ cup lime juice

Blend dressing ingredients in a Vitamix or food blender until blended. Adjust your ingredients if you like more or less lime juice or vinegar. (A few times I forgot the vinegar and the dressing tasted good.)

Cook quinoa, water, and chicken base in a small saucepan with a lid. Simmer on med with cover for 15 minutes or until done or per pkg instructions.  

Place cooled quinoa in a bowl and add the above ingredients to quinoa and mix.   Make up the dressing and pour over the quinoa salad mixture and stir, cover, and refrigerate until chilled. Ready to serve. 6 servings
